The shanks far exceeded expectations. So tender and flavoursome. Have now ordered the ribs and can’t wait to try them. The only drawback was that two packets were foreshanks and three were hind ones, so quite a difference in size, which made it challenging to cook all at once.

Best lamb shanks ever

Middlehurst lamb shanks are one of the nicest meats to prepare, especially in our pressure cooker. Sauted until caramalisation occurs, with nothing more than a good himalayan rock salt and freshly ground black pepper, and then cooked under pressure for just on 1 hr. Meat beginning to just fall off the bone. Could eat them 7 days a week.
