Easy Sausage Tray Bake

This is a great week night recipe to try. Super easy and exciting way to cook sausages. You can easily swap or substitute any of the vege for what you have on hand.
Ingredients

1 x Pkt Middlehurst Hand crafted Sausages
-
3-4 Med-size Potatoes
- 6 Yams
- Punnet of Cherry Tomatoes
- Broccoli
- Bag of Baby Rocket Leaves
- Balsamic Vinegar
- Lemon Juice & Rind
- Honey
- Salt & pepper

Parmesan to Garnish

Fresh Thyme / Rosemary or Pepper & Me Italian Stallion Seasoning
Directions
Turn oven to 180 degrees
Dice potatoes into bite size chunks, season, toss with oil and pop into the oven.
Squeeze the sausages out of there casing into bite size bites and set aside.
Dice the yams and Broccoli.
Grab the tray with the potatoes out of the oven and add the sausage yams & cherry tomatoes as well as the fresh Rosemary or Thyme. Toss well with Salt & Pepper and more oil if needed.
Pop the tray back in the oven for another 10 minutes. Then add the Broccoli and pop it back in oven for another 5.
While that’s cooking whip up a quick dressing.
1/4 cup of Balsamic vinegar, with a good tablespoon of honey, the juice & rind of a lemon. A teaspoon of dried Oregano or Pepper & Me Italian Stallion Seasoning. Mix to combine & check seasoning.
Take tray out of the oven, toss the dressing through and generously grate Parmesan over and serve.
